On April 10th, I took a 9-hour journey away from my parents. I left the great state of Alabama to see what North Carolina was talking about. So far I have LOVED it. However, this transition definitely had to be hard for my parents. Especially with me being an only child and previously only staying at the most 2 hours away from them.
EXCITED could not explain how I felt when I had the opportunity to spend time with them for the Fourth of July. I want to show you a recap of how everything went down, and I have some amazing recipes for you all too. So check it out.
First, my mom came with what she called “office gifts.” It was a big basket of snacks and the cutest card!!!
After resting up a while after their long trip, I took my mama to her FIRST Zumba class. She really liked it except for the fact that the instructor was going “too fast.”
I surprised her with the class. So I decided to surprise her with her FIRST pedicure ever. She really enjoyed herself and decided that this is something she may do every month. It was a lot of first for her that day, and that was only the first day.
So now to the fun part food!I wanted our meal to be jam packed with veggies, and lacking your typical Southern delicacies of pork. So we had three types of marinated chicken: New Orleans Brown Sugar Bourbon, Carribean Jerk Island Woodfire, and Smoked Island Woodfire. Yes, they were marinated by yours truly and grilled by my dad. I also made some street corn on the cob, sweet potatoes, and my Greek Pasta Salad (recipe —> http://wp.me/p4M51x-6r ). For a quick snack, my mom made some Bacon Cream Cheese Pinwheels in spinach wraps the night before. They were so delicious. I will post the recipe for that as well, at a later date. The meal was delicious and it was filling, without that icky stuffed feeling.
Of course, I had to get all cute and jazzy for the day’s festivities. I used various products from my May and June Onyx boxes and my June Ipsy Bag. I will do a separate post on my views of these products, but to put it short I looooooove them.
Later that evening we went to Downtown Raleigh to check out the Raleigh Museum of Natural Sciences. My parents really enjoyed themselves.My Dad is a jewel, rock, and stone enthusiast, actually he loves nature in general, so he really enjoyed himself. My mom really loves to take pictures, of EVERYTHING lol, so this was definitely where she wanted to be. After the museum, we headed further downtown towards the Capitol Building so we could enjoy “The Works,” which is Raleigh’s 4th of July Celebration. There were soooo many vendors, sorry for the lack of pictures. The news station even gave us an opportunity to tell the weather, but as you can see that did not turn out as well as it was planned. We did not stay for fireworks because it would be a 3-hour wait until the start time, and then it started to rain. So we kind of lucked up with our decision to go ahead and leave.
I really enjoyed my time with my parents, and I cannot wait to spend time with them again. Until next time…
